San Matias Tahona


With over 120 years of experience and tradition, Casa San Matías produces some of the world’s finest tequilas. These expressions are made from only the best blue agave, harvested from the rich soil of the Los Altos de Jalisco region, and distilled with the purest spring water. The outcomes are unique tequilas that preserve the legacy of flavor and quality at Casa San Matías.

Casa San Matías was founded in 1886 by Don Delfino González in Magdalena, a small town located west of Tequila, Jalisco. In the 1950s a new distillery was opened in Ojo de Agua, at altitudes above 6,000 feet. The fruitful grounds of Los Altos de Jalisco provide some of the purest spring water in the region. This allows the distillery to produce a wide variety of superior tasting tequilas, all from 100% blue agave. Today, the leadership of Casa San Matías is bestowed in Ms. Carmen Villarreal, the world’s only female distillery head, who leads her team in creating the best tequilas in the region which satisfy the most demanding consumers.

The making of San Matias Tahona begins with highly skilled jimadors hand harvesting only the ripest agave. Then, the pinas (heart of the agave) are slowly cooked in brick ovens. The cooked agave is then crushed slowly with the very same original tahona basalt stone that was used more than 100 years ago to extract the rich agave juices. By using the ancient tahona method, the agave juices extracted retain their sweet, aromatic flavors. The juice is then fermented in pine wood vats, distilled twice in copper pot stills, bottled and hand-labeled with care.

San Matias Tahona Blanco

San Matias Tahona Blanco is is colorless, bright, clean and transparent with silver reflections. The legs are full bodied with consistent unctuosity. Pure citrus, white flowers, intense cooked agave and legumes on the nose. In the aftertaste, there is a presence of citrus blossoms and a hint of pink pepper. It is incredibly sweet with flavorful mineral notes. It is very smooth.

San Matias Tahona Reposado

San Matias Tahona Reposado is slightly golden, very bright clean and transparent with golden highlights, denotes great body by its slow descent of the legs in the glass. It carries an aroma of ripe fruits, vanilla and lactic aroma of lightweight minerality butter. Notes of bread crush, honey and notes of sweet hazelnuts. Sweet, mineral sapidity and adequate acidity, meeting roundness and harmony in its flavor.
